The restaurant welcomes Chef Dillon Tafoya to lead its premier sushi program, expanding the formidable Roth’s culinary program. A Colorado Springs native with over a decade of sushi expertise, Chef Tafoya brings a distinctive style and philosophy centered on balance, precision and respect that honors traditional Japanese technique while incorporating his Colorado roots and regional influences gained from working across both Colorado and Maine.
